Inspiration came to me in form of a chocolate chip cookie…
or to put it another way….
it was just too cold outside to go anywhere, and I was bored.
While looking through my collection of cookbooks, I stumbled upon a recipe for Chocolate Chocolate Chip Cookies from The Cat Who…Reunion Cookbook by Julie Murphy and Sally Abney Stempinski. The recipe is really easy to follow and doesn’t require a commitment to spending all day in the kitchen baking. I wasn’t too sure about adding cocoa powder to chocolate chip cookies, but it added another flavor dimension to basic chocolate chip cookie. They turned out to be a very rich chocolate chip cookie. The next time I make these, I’ll make them with white chocolate chips. The combo of dark and white chocolate should be yummy to the extreme!

Chocolate Chocolate Chip Cookies
2/3 cup shortening
1 cup brown sugar, firmly packed
1 cup sugar
2 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup of chocolate chips (but I added the whole 12 ounce bag cause I like extra chocolate chips in my chocolate chip cookies)
1.) Preheat oven to 350 degrees.
2.) Cream shortening and sugars.
3.) Beat in eggs.
4.) Mix together the flour, cocoa, baking powder, and salt in a separate bowl.
5.) Beat flour mixture into creamed mixture.
6.) Stir in vanilla and chocolate chips.
7.) Drop by rounded tablespoonfuls onto cookie sheets.
8.) Bake 12-14 minutes
Makes 3-4 DOZEN COOKIES
